This is a planning guide to six restaurants, checked against their published information on 20 September 2026. It does not claim a recent meal at each restaurant. Menus, service days and booking terms can change; use the linked official pages to confirm your date.

Six Test Kitchen: plan the evening around the reservation
Six Test Kitchen is in Tin City. Its official website requires reservations and links to booking. Tin City’s restaurant listing identifies chef Ricky Odbert and describes a seasonal tasting-menu format.
Secure the booking before arranging the rest of the evening. Check the current menu price, service time, dietary accommodation and cancellation terms through the restaurant’s booking link. Leave an unhurried evening for the meal and arrange the journey back to your accommodation if you will be drinking. Tin City is a separate stop from the downtown square, so use the restaurant’s address when planning transport.
Les Petites Canailles: check the service day before booking
At 1215 Spring Street, Les Petites Canailles is a dinner option to build into a town-based stay. Its official reservation page currently lists Monday and Thursday to Sunday, 5–9pm, with Tuesday and Wednesday closed.
The page specifies a per-person deposit credited to the meal and cancellation conditions; read those terms before confirming. Larger parties should contact the restaurant as directed on that page. Check the current menu rather than planning around a dish from an older review, and discuss dietary needs before booking.
In Bloom: an evening on Spring Street
In Bloom is at 1845 Spring Street. The restaurant’s own introduction describes a Central Coast ingredient focus and a room with vinyl records playing, and lists dinner from 5pm, Wednesday to Sunday.
Consider it when you want to finish the day with dinner in town rather than another drive out to an estate. Use the official site to check the current menu and reservation options. Allow time between your last daytime stop and dinner, especially if you need to return to your accommodation first.
The Hatch: a downtown dinner you can reserve
The Hatch serves wood-fired comfort food at 835 13th Street. Its reservation page lists daily service from 4:30–9pm, recommends reservations and welcomes walk-ins.
A booking makes sense when dinner needs to fit a fixed arrival time or a group plan. If you choose to walk in, leave flexibility for a wait. For larger groups or particular seating needs, contact the restaurant through its official site; do not assume the normal online booking covers every party size.
FINCA: a casual lunch option, with Sunday closed
FINCA’s own description centres on Baja- and Sonora-style Mexican cooking, including wood-grilled seafood and carne asada. It is at 1803 Spring Street, Suite A. The current published hours are Monday to Saturday, 11am–8pm, with Sunday closed.
It is a useful lunch candidate when a formal dinner is already planned for later. Check the current menu and any date-specific notices before going. For a Sunday itinerary, choose another lunch plan.
The Restaurant at JUSTIN: give the estate dinner its own time
The Restaurant at JUSTIN is at 11680 Chimney Rock Road. Its official dining page describes a seasonal multicourse dinner and lists Thursday to Sunday, 6:30–9pm. Use its reservation link to confirm the seating available for your date.
This is the estate address, not a downtown tasting-room visit. Check the journey from your accommodation and arrange the return before dinner. If wine is part of the evening, book suitable transport or agree on a non-drinking driver. Confirm the dining experience you are reserving; a winery tasting and a restaurant dinner are separate arrangements.
A practical two-day food-and-driving plan
The following is a suggested structure, not a booked itinerary. Adapt it to the restaurant opening days, your arrival point and the time you want to spend on the road.
- Arrival day: check in, confirm parking and choose a town-based dinner. Avoid tying a prepaid meal to an optimistic long-distance arrival estimate.
- Driving day: review the Paso Robles Wine Country Drive Pack, choose the sections that fit your day and leave time for lunch and stops.
- Tastings: arrange winery visits independently. Separate tasting from driving with a non-drinking driver or prearranged transport, including the return journey.
- Second evening: make a tasting-menu dinner the main event if that is your priority. Leave room to return to your accommodation before the reservation.
You do not need to visit every restaurant or combine every wine-country stop. One lunch and one well-planned dinner can be enough for a full day.
Parking, distances and reservations
The City of Paso Robles says its paid parking programme has ended. That does not guarantee an available space, remove posted restrictions or apply to every private car park. Check signs and ask your accommodation or restaurant about access if your vehicle needs particular clearance or parking arrangements.
Use the exact restaurant address for your journey estimate. Downtown, Tin City and the Chimney Rock Road estate are not interchangeable locations. Check current traffic and road conditions instead of relying on a fixed travel time from Los Angeles, San Francisco or another Central Coast town.
Before booking, confirm service day, party size, dietary requirements, deposit, cancellation deadline and the likely length of the meal. Keep those details with your trip plan. Do not assume that transport will be immediately available from a rural estate late in the evening.
Connect the meals to the drive
